It’s been a busy weekend at Potion Life HQ. We had two awesome nights out (and a wedding) and the day after fog on Sunday was strong. As well as downing shots of After Party, it needed something stronger. That something was our version of the world-famous hangover busting huevos rancheros, slightly less coma-inducing than a full English and full of replenishing vitamins and minerals to make you feel slightly less terrible...
Serves 2:
1 corn tortilla per person (we used two small ones each)
2 eggs per person
1 tablespoon of crumbled chorizo per person (obvs miss this out for a veggie version)
A handful of drained tinned black beans person
½ avocado per person
A chopped tomato
½ squeezed lime per person
2tbsp chopped coriander (more or less depending on if you like!)
50g crumbled mild cheese (we like Lancashire) per person
Chilli sauce or chopped fresh chillis - to give it that wakey wakey kick
Assembly:
Fry the corn tortilla for a couple of minutes each side to warm through, remove from pan and pop onto a plate.
In the same pan, fry the chorizo until crispy (gives a great texture to the taco)
Whilst it’s frying, smush the avocado in a bowl with salt, pepper, lime juice and coriander.
Scramble the eggs (can use the same pan as the chorizo - no one wants to wash up on a hangover) and pop on top of the tortilla.
Warm the beans briefly in the pan (don’t have to do this but I like them warm!) and sprinkle over eggs.
Assemble in whatever order you fancy, scatter the cheese.
Pop avocado and tomato on top, drown in as much chilli sauce as you like and get it into your face, ideally with a spicy virgin (or Bloody!) Mary and enjoy!
